Join our dynamic team as a Remote Breakfast Cook, where you’ll contribute to the preparation, production, and artistic presentation of a diverse range of delicious meals and baked goods. This role is essential in ensuring quality food service operations align with NMS’ mission, vision, and values, while also upholding departmental practices and protocols.
Key Responsibilities
- Execute main line food production tasks assigned for your shift, preparing breakfast, lunch, dinner, and a variety of snacks and beverages.
- Create and bake an array of delightful bakery products suited for a remote camp environment.
- Carry out pastry tasks, including mixing, baking, and frying, as required to fulfill our menu offerings.
- Collaborate with supervisors to innovate and refine recipes and menu selections.
- Monitor and replenish kitchen ingredients with an emphasis on proper rotation practices.
- Conduct daily reviews with supervisors, complete production sheets, assess maintenance reports, and confirm supply inventory.
- Prepare and restock fresh vegetables, salads, meats, sauces, and bakery items to maintain a well-organized serving area.
- Utilize production sheets to gauge quantities needed for service areas effectively.
- Employ various food preparation techniques and equipment, demonstrating proficiency with cutting instruments, while also creating both pre-made and new salads as needed.
- Assist team members in food production and take on various special tasks as required.
- Participate in the service line as needed to ensure guest satisfaction.
- Conduct cleaning and special food preparation projects as required.
- Ensure systematic rotation of food items per established guidelines.
- Maintain cleanliness of food preparation areas, including wiping down surfaces, sanitizing, and organizing workstations.
- Oversee cleaning tasks for kitchen equipment and storage areas and manage overall sanitation protocols.
- Verify that service lines and food bars are stocked, set up correctly, and kept clean.
- Manage waste disposal and assist in setting up/breaking down service areas.
- Communicate effectively with supervisors about meal needs and any additional supplies required.
- Deliver menu display announcements as instructed by supervisors.
- Handle freight tasks regularly as part of kitchen operations.
- Supervise staff effectively, ensuring a high standard of food quality and sanitation.
- Train and instruct food service personnel on best practices and rotation procedures.
- Maintain food production equipment and storage areas per safety and sanitation guidelines.
- Timely notify supervisors of any safety or sanitation compliance issues.
- Engage in other essential duties that support the overall success of the department or unit.
Qualifications
- High School Diploma or equivalent (GED).
- At least three (3) years of relevant cooking and baking experience in a restaurant setting, showcasing a strong knowledge of high-volume food production and supervisory techniques.
- Must possess or obtain an Alaska Food Workers Card and/or ServSafe Certification post-hire.
- Successfully pass all pre-employment requirements, including drug tests and physical assessments. Travel to testing locations is at the candidate’s expense.
- Ability to train others and juggle multiple responsibilities concurrently.
- Demonstrated teamwork and collaboration skills with colleagues and clients.
- Ability to make decisions independently with minimal supervision.
- Comfortable standing for 12-hour shifts and residing in dormitory-like accommodations in a remote camp.
- Comply with all safety guidelines and regulations as outlined by the company.
- Effective communication skills in English, both written and verbal.
Preferred Qualifications:
- Associate’s Degree in Culinary Arts or completion of a certified culinary program; those without this formal training should have two additional years of relevant experience.
- A minimum of two (2) years in a supervisory role within a restaurant or industrial kitchen setting.
Important Information for Candidates in Alaska and Beyond:
For those residing outside the Anchorage area, Anchorage will be the designated point of hire for pre-employment tests, except for drug tests conducted closer to your residence. Candidates bear responsibility for all travel expenses related to pre-employment activities in Anchorage, including necessary training and testing. For candidates within Alaska, pre-employment testing will be convened in your local area unless otherwise stated.
Travel to Remote Locations: All employees are responsible for covering their travel costs to Anchorage for scheduled flights to remote work sites, with all flights billed by the company.
Working Conditions and Physical Demands:
This position entails working in both indoor and outdoor environments, often facing Arctic conditions. Be prepared to work in a bustling industrial kitchen that maintains a moderate to loud noise level. Candidates must be physically fit to perform various tasks, including standing, lifting, climbing, and more. The role includes handling the following physical responsibilities:
- Lifting weights ranging from 30 to 50 pounds multiple times.
- Carrying weights for designated distances.
- Performing various movements including squats, kneeling, and more—all at a self-paced rate.
- Traveling by plane or bus to remote camp locations as needed.
